If you simply Google iPod or iPad and education you will get an overwhelming number of results and looking for apps in the App Store can be equally overwhelming. Here are some great sites to get started with, most of which focus specifically on the iPad in the classroom:

  •  iPad Art Room - from Distinguished Apple Educator Cathy Hunt, who teaches art in a 1:1 iPad classroom for years 6-12 (ages 11-18.) Check out the lesson ideas and you'll see why she's an Apple Distinguished Educator!
  • iPads in Art Education -written by 2 art teachers in different US states.
  • PE apps - a list of apps that Physical Education teachers might find useful, from Ed-Tech Ideas
  • TapTapMath - a blog that focuses solely on apps for math.
 Here are some links specifically for special educators:
  •  Apps for AAC focuses specifically on iOS apps for augmentative and alternative communication for those with speech and language difficulties.
  • Apps for Special Education - a list put together in October 2010. 
  • iPad - SEN PLC - the iPad resource list for the iPad PLC for Special Educational Needs (SEN) schools in South Wales. There is a strong focus on apps that use touch screen, tilting, camera and mobility, and apps for the most severe needs. 
  • Speech Techie -  written by a guy who's both a Speech-Language Pathologist (SLP) and Instructional Technology Specialist (ITS)
  • Spectronics - a long and detailed list of AAC apps for iOS devices.  
  • Technology in (Spl) Education has a great list of recommended apps sorted by IEP goal.  
If you are on Facebook, 'like' a4cwsn, Apps for iPads, SpeechTechie and Technology in Education. They have reviews of apps and are a good source of info about apps going on sale. If there's a particular developer whose apps you like, look for them on Facebook too and friend them. I've gotten free promo codes that way as well as info about apps going on sale.  AppFriday on Facebook is another good place to find out about apps that are free or on sale on a temporary (usually one day only) basis.
